support for katex

One important thing I dislike about mathjax is that people can't select (mouse click + drag) numbers or text and copy&paste that elsewhere. Katex allows you to do that, as it is rendered differently. And from what I understand, mkdocs-to-pdf only supports mathjax.

Would it be difficult to support katex too? I'm honestly not sure how much work that would be. Either way, the mkdocs-to-pdf is very nice plugin. This math thing, however, is a huge obstacle for me.
