I have always used the Peak meter to make sure the outgoing audio is loud enough. Should I be actually using the VU meter and not worry if red is appearing on the Peak meter? How do I increase the volume level if I am relying on the VU meter?

Just added a loudness meter which is considered the right thing to be looking at. Keep it in the green. The left loudness meter is slow response and the right is fast response. They are both a mix down of left and right audio. By default the green band is about as loud as you can get away with though you can set levels quite a bit lower.

Setting the ReplayGain to +7dB will put you in the zone if you have properly tagged music.
