Three possible theories
1) It's reasonable to assume the krayt cannot digest metal, and indeed its acid may well only affect organic matter. Supporting this theory, the Tusken Raiders who fell to its acid were instantly affected on skin contact, but their clothes didn't appear to dissolve at all.
2) It's also possible the Mandalorian's beskar armor is unusually resistant to acid. Beskar is a unique metal, an alloy that affords Mandalorians a high degree of protection even against blaster bolts. There's no evidence it rusts or corrodes, which may well mean precious few acids are able to chemically react with it. Thus, as powerful as the krayt dragon may be, its most potent weapon could actually be completely useless against a Mandalorian. The formidable creature may well have found Din Djarin completely indigestible.
