Preface
The newly revised fifth edition of our Building Java Programs textbook is
designed for use in a two-course introduction to computer science. We have
class-tested it with thousands of undergraduates, most of whom were not
computer science majors, in our CS1-CS2 sequence at the University of
Washington. These courses are experiencing record enrollments, and other
schools that have adopted our textbook report that students are succeeding
with our approach.

Introductory computer science courses are often seen as “killer” courses with
high failure rates. But as Douglas Adams says in The Hitchhiker’s Guide to
the Galaxy, “Don’t panic.” Students can master this material if they can learn it
gradually. Our textbook uses a layered approach to introduce new syntax and
concepts over multiple chapters.

Our textbook uses an “objects later” approach where programming


fundamentals and procedural decomposition are taught before diving into
object-oriented programming. We have championed this approach, which we
sometimes call “back to basics,” and have seen through years of experience
that a broad range of scientists, engineers, and others can learn how to
program in a procedural manner. Once we have built a solid foundation of
procedural techniques, we turn to object-oriented programming. By the end of
the course, students will have learned about both styles of programming.

The Java language is always evolving, and we have made it a point of focus
in recent editions on newer features that have been added in Java 8 through
10. In the fourth edition we added a new Chapter 19 on Java’s functional
programming features introduced in Java 8. In this edition we integrate the
JShell tool introduced in Java 9.

New to This Edition


The following are the major changes for our fifth edition:

JShell integration. Java 9 introduced JShell, a utility with an interactive


read-eval-print loop (REPL) that makes it easy to type Java expressions
and immediately see their results. We find JShell to be a valuable learning
tool that allows students to explore Java concepts without the overhead of
creating a complete program. We introduce JShell in Chapter 2 and
integrate JShell examples in each chapter throughout the text.
Improved Chapter 2 loop coverage. We have added new sections
and figures in Chapter 2 to help students understand loops and
create tables to find patterns in nested loops. This new content is based on
our interactions with our own students as they solve programming
problems with loops early in our courses.
Revamped case studies, examples, and other content. We have
rewritten or revised sections of various chapters based on student and
instructor feedback. We have also rewritten the Chapter 10 (ArrayLists)
case study with a new program focusing on elections and ranked choice
voting.
Updated collection syntax and idioms. Recent releases of Java have
introduced new syntax and features related to collections, such as the
“diamond operator;” collection interfaces such as , , and ;
and new collection methods. We have updated our collection Chapters
10 and 11 to discuss these new features, and we use the diamond
operator syntax with collections in the rest of the text.
Expanded self-checks and programming exercises. With each new
edition we add new programming exercises to the end of each chapter.
There are roughly fifty total problems and exercises per chapter, all of
which have been class-tested with real students and have solutions
provided for instructors on our web site.
New programming projects. Some chapters have received new
programming projects, such as the Chapter 10 ranked choice ballot
project.

Features from Prior Editions


The following features have been retained from previous editions:

Focus on problem solving. Many textbooks focus on language details


when they introduce new constructs. We focus instead on problem solving.
What new problems can be solved with each construct? What pitfalls are
novices likely to encounter along the way? What are the most common
ways to use a new construct?
Emphasis on algorithmic thinking. Our procedural approach allows us
to emphasize algorithmic problem solving: breaking a large problem into
smaller problems, using pseudocode to refine an algorithm, and grappling
with the challenge of expressing a large program algorithmically.
Layered approach. Programming in Java involves many concepts that
are difficult to learn all at once. Teaching Java to a novice is like trying to
build a house of cards. Each new card has to be placed carefully. If the
process is rushed and you try to place too many cards at once, the entire
structure collapses. We teach new concepts gradually, layer by layer,
allowing students to expand their understanding at a manageable pace.
Case studies. We end most chapters with a significant case study that
shows students how to develop a complex program in stages and how to
test it as it is being developed. This structure allows us to demonstrate
each new programming construct in a rich context that can’t be achieved
with short code examples. Several of the case studies were expanded and
improved in the second edition.
Utility as a CS1+CS2 textbook. In recent editions, we added chapters
that extend the coverage of the book to cover all of the topics from our
second course in computer science, making the book usable for a two-
course sequence. Chapters 12 –19 explore recursion, searching and
sorting, stacks and queues, collection implementation, linked lists, binary
trees, hash tables, heaps, and more. Chapter 12 also received a
section on recursive backtracking, a powerful technique for exploring a set
of possibilities for solving problems such as 8 Queens and Sudoku.

This year also marks the release of our new Building Python Programs
textbook, which brings our “back to basics” approach to the Python language.
In recent years Python has seen a surge in popularity in introductory computer
science classrooms. We have found that our materials and approach work as
well in Python as they do in Java, and we are pleased to offer the choice of
two languages to instructors and students.

Layers and Dependencies


Many introductory computer science books are language-oriented, but the
early chapters of our book are layered. For example, Java has many control
structures (including for-loops, while-loops, and if/else-statements), and many
books include all of these control structures in a single chapter. While that
might make sense to someone who already knows how to program, it can be
overwhelming for a novice who is learning how to program. We find that it is
much more effective to spread these control structures into different chapters
so that students learn one structure at a time rather than trying to learn them
all at once.

flexibility of study then beginning in Chapter 7 . Chapter 6 may be

Una lieve tinta di porpora salì alle gote di Elisa.
— Le piace giudicarlo tale, — rispose pacatamente. — Me ne duole
assai, ma mi permetterà di farle osservare, cara zia, che sinora...
— Sinora, per l'appunto. Ma sinora non è tutto nella vita. Si è
sempre a tempo per far ridere la gente. E tutto ciò, sai, ha un po' di
ridicolo... non ti pare?
Avanti, zia Balbina, coraggio. Un altro millimetro. A momenti ci
siamo, al punto voluto. Guarda com'è già pallida la donna a cui stai
parlando.
— La prego, zia, — disse Elisa brevemente, — vogliamo lasciare
quest'argomento?
— No, — rispose zia Balbina, — bisogna esaurirlo anzi. Son venuta

— Ah! — disse Elisa, con un lieve accento ironico. — E adesso, si è
sincerata?
Voleva provarsi a giuocar d'audacia. Ma non era il suo forte. Un
tremore nervoso agitava il suo labbro.

moltissime cose, hai presa la tua parte sul serio. Il ragazzo... si sa...
si è montata la testa... ci vuol tanto, a quell'età! E tu invece di
canzonarlo bellamente...
Elisa depose il suo ricamo con uno sguardo che produsse una
leggera alterazione nel piano del discorso di zia Balbina. L'egregia
donna ebbe un piccolo impeto di tosse, esaurito il quale, proseguì:
— Senz'accorgerti, dico, hai lasciato ch'egli si montasse la testa.
Sfido io... la prima donna che si è occupata di lui. E poi, ben inteso,
la donna... non una donna, come accade alla sua età. Sei ancora
abbastanza conservata per piacere, e... insomma... è naturale sino
ad un certo punto che egli sia innamorato di te. Ma s'egli è un
ragazzo, tu non lo sei, mia cara. Hai per lo meno l'età della ragione!
Hai trentanove anni, mia cara. Non si direbbe, certe volte, ma li hai.
Oh! li porti benissimo ed è una eccellente età, relativamente. L'ho
sempre detto, anzi, che dovresti rimaritarti, e giacchè ho già una
volta la mano così buona...
— Zia, — interruppe Elisa con un movimento così vibrato che fece
quasi trasalire la zia Balbina. Oh!... Oh! quella sua nipote, che vampe
aveva gettate dagli occhi! che vibrazioni aveva in tutta la persona.
— Oh, — ribattè zia Balbina, cercando di dissimulare col sarcasmo lo
stizzoso stupore che l'invadeva, — non temere. Lo so che una
fortuna come quella che dovesti a me non capita due volte ad una
donna, neppure quando abbia il buon senso di apprezzarla. Ma ciò
non entra nel mio argomento. E non discuto neppure sul resto, sai?
Volevo solamente chiederti, e ti chiedo: cosa conti di fare?
Finalmente aveva toccato il fondo, quel dito sagace. C'era e non si
moveva più.
Elisa incrociò le braccia con un calmo gesto di stanchezza.
— Nulla! — rispose laconicamente.
Un momento di cupo silenzio regnò nel salotto, e una nuvola calò
visibilmente sulla fronte di zia Balbina. Le parve che pungesse un
pochino, là dove aveva messo il dito. Prese una grande risoluzione.
— È la tua ultima parola? — chiese categoricamente ad Elisa.
— L'ultima.
La zia Balbina si sgomentò. Aveva tentato il categorico imperativo di
Kant, coll'assoluta certezza di vincere. Ma questa era una Elisa
nuova, ch'ella non conosceva, che si difendeva con delle armi ed un
volere inaspettato. Che fare ora? Battere in ritirata?
Ebbe una subita ispirazione.
— Quella che avresti risposto a tuo padre?
Ora, aveva colpito giusto. Un estremo pallore sostituì sul volto di
Elisa la fiamma della ribellione.
Alzò il capo, e lo sguardo pieno di angoscia incontrò sulla parete il
quadro entro cui campeggiava la bianca testa sì nobile, sì dolce.
Un'onda di ricordi le si affollò al cuore, destandovi un subito
ravvivarsi di appassionato rammarico, il senso di un supremo
bisogno di simpatia, di consiglio, d'aiuto, quale lui, lui solo, avrebbe
potuto darle.
— Papà, — mormorò. — Oh!... padre mio!... — Ed era piena di
lagrime, d'intimo ed umile sgomento, quell'unica frase. Ah! se fosse
stata sola, con quale impeto Elisa si sarebbe gettata ai piedi di quel
ritratto, quale ardente sfogo di pianto avrebbe sollevato il suo cuore,
forse rischiarata la notte di incertezze crudeli in cui si dibatteva
quella povera anima appassionata!
Ma ciò non si poteva fare. C'era zia Balbina che detestava le scene. E
quella sarebbe stata per l'appunto una scena...
Elisa vinse dunque quell'impeto, e rivolse a zia Balbina uno sguardo
calmo e quasi sottomesso.
— Zia, la prego... lasciamo per ora questo argomento.
— No, mia cara, — ribattè zia Balbina. — L'abbiamo intavolato, e
voglio che ne tocchiamo il fondo. Sei mia nipote e devi ascoltarmi.
Per questa volta... perchè poi sarò io che non te ne parlerò più. È
necessario che tu prenda una decisione. Sei in una posizione falsa e
ridicola, e ci sei per colpa tua, unicamente tua. Capirai che non
discuterò con te le cause di un'infatuazione assurda da tutti i lati e
sotto tutti i riguardi, e per la quale nelle tue circostanze non esiste
una sola scusa plausibile, nè ammissibile. Ora, ciò deve cessare. È
duopo far intendere a quel ragazzo che ormai le sue visite sono di
troppo, e, se non vuoi farlo tu, me ne incarico io.
Elisa andò diritta verso la zia. Una formidabile ira splendeva nei suoi
occhi, qualcosa come un'irradiazione di magnifico orgoglio, sì fiero, sì
determinato che zia Balbina indietreggiò involontariamente d'un
passo, e s'accorse di aver commesso un errore.
— Mia cara zia, — disse Elisa con somma calma, — lei non farà
nulla, assolutamente nulla di simile. Le sono grata della sollecitudine
che dimostra per ciò che mi riguarda, ma la prego di credere, al pari
di me, che io sola ho il diritto di giudicare delle cose mie. E questo,
zia Balbina, una volta per tutte.
Zia Balbina non rispose. Sulla sua fronte rugosa, sulle magre gote
era salito quel rossore cupo d'ira repressa ch'è così penoso a vedersi
sul volto dei vecchi. Ella si sentiva vinta.

— Sta bene — disse. — È quello che, si doveva, naturalmente, al mio

Era per tempo assai, la prima corsa. Ma sin dalla sera avanti la zia
Balbina aveva fatto preparare il suo baule dalla cameriera. Il treno
partiva alle sette e quaranta, ed erano testè scoccate le sei e mezzo.
La luce mattina era ancora troppo fioca per rischiarare sola gli ultimi
preparativi della partenza. Due candellieri accesi ardevano sul
tavolino, e china su una grossa sacca da viaggio di zigrino nero, la
grossa Viola, la cameriera di zia Balbina, insaccava colla massima
diligenza l'immenso materiale che la padrona giudicava necessario al

forms $4.00. The lumber was all on hand and can be used again.
How to Place Concrete
No time should elapse between the “mixing” and the “placing.”
Directions for placing must of necessity be general, and the farmer
must use his own judgment as to how to handle this part of the
concrete work, in connection with whatever particular job he has on
hand. The important thing to remember is, that the materials should
not separate in placing.
You may shovel the concrete off the board directly into the work;
you may shovel it into wheelbarrows, wheel it to position and dump,
or you may carry it to the proper place by buckets and hoisting
apparatus.

Directions for Placing


Ordinarily speaking, concrete should be deposited in layers about
6 inches thick.
After placing concrete in the Form, it should be “tamped” lightly
with a wooden or iron tamper (or rammer) until the water shows on
the top and no stones are left uncovered by mortar.
In order to obtain a smooth face on the concrete, the mixture
should be carefully “spaded” immediately after “placing”—on the
side next to the Form where the finished concrete will be exposed to
view. By “spading” is meant the working of a spade or a beveled
board between the concrete and the side of the Form, moving it to
and fro, and up and down. This forces the large stones away from
the boarding, or Form, and brings a coating of mortar next thereto,
thus making the face of the work present an even, smooth
appearance.
The Necessary Tools
On certain jobs—as, for instance, in the case of a 6-inch silo wall
—a spade cannot very well be used, on account of the narrowness
of the concrete section. In this event, use for surfacing, a thin
wooden paddle, made from a board 1 inch by 4 inches, and
gradually sharpened to a chisel edge at the end. The sharpening
should be on one side only, and in using this paddle place the flat
side against the Form, as shown in illustration.
When the mixture is a dry one, great care must be used in this
“spading” or surfacing, in order to obtain uniform results, but in the
case of a wet mixture, spading is only required as an added
precaution against the possibility of voids in the face of the work,
and in many cases it is not necessary at all.

Protection of Concrete after Placing


Green concrete should not be exposed to the sun until after it
has been allowed to set for five or six days. Each day during that
period the concrete should be wet down by sprinkling water on it,
both in the morning and afternoon. This is done so that the concrete
on the outside will not dry out much faster than the concrete in the
center of the mass, and should be carried out carefully, especially
during the hot summer months. Old canvas, sheeting, burlap, etc.,
placed so as to hang an inch or so away from the face of the
concrete will do very well as a protection. Wet this, as well as the
concrete. Often the concrete Forms can be left in place a week or
ten days; this protects the concrete during the setting-up period and
the above precautions are then unnecessary.

Points to Remember
It may be well, in summing up, to emphasize the following
points:—

1st. The materials must be perfectly clean.


2d. The mixing must be in proportions carefully determined.
3d. The mixture must be used while absolutely fresh.

Good results cannot be obtained unless you use a good cement,


nor will the work be at its best unless care is taken in the selection
of clean sand and clean stone.
Among the uninitiated, there is an all too prevalent idea that
anything is good enough for the making of concrete. Some will tell
you that sawdust, shavings, mud, clay, etc., will do to complete the
mixture, but the absurdity of this notion will very soon become
evident to anyone who neglects the precautions which have been
above pointed out.

Reinforcement
Principles involved
Concrete and steel render valuable assistance to each other in
the support of heavy burdens. On a solid foundation, loaded from
above and thus under direct pressure, a concrete column will
withstand the strain of an enormous load. A much smaller load so
placed as to cause stretching or bending toward one side of the
same column may cause it to snap off, for concrete is strong, but
brittle. On the other hand, steel is tough and elastic. In the form of
rods or wire, steel withstands massive loads that tend to stretch it,
and thus displays a kind of strength directly opposite to that of the
plain concrete column. In modern construction these two valuable
properties of concrete and steel are utilized by combining them in
what is called reinforced concrete. With steel properly buried in the
concrete, the column withstands not only the load which might
otherwise snap it, but one many times larger, and even though it is
applied at any place along its length.
Reinforcement, therefore, is steel in the form of rods, bars or
wires, buried in concrete to take up and to withstand the strains
which tend to stretch or to bend the concrete. A concrete fence post
is merely a small concrete column. Reinforced, it easily stands the
strain from usage in a fence line.

The value of reinforcing concrete posts properly may readily be


seen in the figure. If a load (L) is raised so that its weight is
supported on one side by a wooden post, the post will bend. The
fibre in the wood on the side away from the load may be tough and
elastic enough to prevent the post from breaking, and when
released the post will spring back into its former position. In the
third figure a No. 9 wire (W) is fastened securely to the wooden post
at the top and at the ground surface, and is supported along its
length by the struts (S). If the same load is applied, the post will not
bend, because the wire takes up the bending or stretching strain.
This is precisely the case with the reinforcement in a concrete post.
Supported along its length by the concrete, the wire (W) or steel in
other shapes takes up the bending or stretching strains. Since the
load which causes bending or stretching may come from any
direction, concrete posts are reinforced on every side; otherwise
they might break in a manner somewhat similar to that in which the
wooden post bends when the reinforcement is not on the proper
side of the post.
In the effort to be safe it is a common fault to insert more
reinforcement than is absolutely necessary. This adds needlessly to
the cost, for concrete becomes stronger as it grows older.

Kinds of Reinforcement
With regard to the roughness of the outside, metallic reinforcing
materials are divided into two classes, smooth and corrugated or
deformed. The general result of the many tests carried on in testing
laboratories seems to indicate that in strength of bond, if the
concrete is sufficiently rich and well mixed, smooth surfaces give
satisfactory results. Two kinds of reinforcement are much used—bars
and wire.
Bars.—Round bars three-sixteenths or one-fourth of an inch in
diameter are the size and kind most used on the farm. The stock on
hand at blacksmith shops and hardware stores is generally from
steel that stretches too easily and therefore is not the best for
reinforcement. Companies which make a specialty of reinforcing
materials can furnish both rods and bars which stretch only under
very large loads.
Wire.—The development of the wire fence has produced a
material well suited for reinforcing purposes. Of equal size, such wire
will produce a stronger reinforcement than the material above
described. In order to obtain straight wire of the necessary length,
the coils ordinarily placed on the market should not be straightened
out. Straight wire can be obtained from dealers in the same manner
as baling wire; that is, either single or twisted into two or three-ply
cables, and of the length desired. The plain, ungalvanized fencing
wire is the proper kind, for galvanization adds nothing to the
strength, and the metal will not rust when incased in the concrete.
Concrete Sidewalks and Floors
Concrete floors are nothing more than sidewalks of large size,
and are formed by casting slabs in place.
The description given is an economical and practical method of
laying sidewalks or floors, easily adapted to any use where concrete
is found advantageous. This description will therefore apply not only
to the building of sidewalks, but to all flat surfaces of concrete
resting on the ground.

Lasting Qualities
Concrete floors must remain hard and in position to be
permanent. To accomplish this, good materials must be used, and
proper methods of mixing and placing must be followed. Only in this
way can settlement cracks, upheaval by frost or roots of trees,
contraction cracks, crumbling, and general failure be avoided.

Settlement Cracks
To avoid settlement cracks, thoroughly ram the ground after
excavating for the foundation. This gives a solid bearing to the
concrete slab.

Upheaval by Frost
To prevent upheaval by frost a foundation formed of crushed
stone, hard furnace cinders, brick bats broken to about a 2-inch size,
broken tile or any other hard porous material, should be laid in such
a way as to obtain perfect drainage. Never use ashes.
kept climbing on top of it until they could reach the hole and climb
through.
As they crawled into the hole something warm and sticky flowed
by them, so they hurried back into the room from which they had
just come. It was lucky for them that they did, for the sticky stuff
poured from the hole in a stream and mixed with the white stuff
which now nearly filled the room.
“It’s molasses!” Gran’pa cried, as he tasted it.
“And the white stuff is popcorn!” Gran’ma cried in turn, as she
took up a handful and squeezed it together into a popcorn ball.
The molasses candy continued to pour from the hole until the
popcorn was covered with it. Then the room began to sway back
and forth, gently at first, then faster and faster, until Gran’pa,
popcorn and Gran’ma were shaken up and rolled about much the
same as popcorn is in a shaker. Both Gran’pa and Gran’ma were
covered with molasses and popcorn when the room ceased shaking.
“Dear me suz!” Gran’ma exclaimed. “The stuff is all in my hair!—
This is a mess!”
“Yes, but just taste it, Gran’ma!” Gran’pa said. “It’s fine!”
Again the room began shaking and the air grew much warmer.
“We’d better get out of this!” Gran’pa said. “There must be a fire
under the room!”
So they crawled through the hole again and now the molasses
candy had grown hard and did not stick to their hands.
“This must be the place the molasses came from,” said Gran’ma,
as they came to another room, the sides of which were covered with
candy.
There seemed to be no opening at the top for the candy to
come in and Gran’pa soon discovered that it came in from the
bottom.
Through the hard candy at the side of the room Gran’ma
thought she saw a light, and when Gran’pa pried a large piece away
with his cane they saw another long, narrow opening.
Through this they crawled until the passageway widened and
they could stand up and walk.
After walking down this passageway for five or ten minutes
Gran’pa and Gran’ma came to a room filled with purple light, and in
the center of this room stood a large Green Jar.
“Well I won’t be foolish enough to look in this one!” Gran’pa
said, as he walked right past it and opened a door upon the other
side. “Here we are, Gran’ma! I can see daylight, and the steps lead
up to the top of the ground.”
“If that is the case, I shall take a peep in this Green Jar!”
Gran’ma said.
“Don’t do it, Gran’ma!” Gran’pa cautioned. “Profit by our last
experience!”
“Yes, but the other was a pot, and pots are always apt to boil
over or do something of the sort,” Gran’ma answered. “I shall look
into this Green Jar and you can hold the door wide open, like this, so
it won’t take a moment to drop it and hurry up the steps and escape
if it begins to blow popcorn or do anything of the kind.”
“Did you open the Green Jar?”

Gran’ma took the lid from the Green Jar and thick red smoke
came whirling up from it.
Gran’ma wished to run, but her knees would not let her, so she
sat right down, smack! upon the floor and watched.
When the smoke thinned out Gran’ma saw the hands, then the
arms, then the head of a Beautiful Girl appear above the edge of the
Green Jar.
She raised her arms above her head and yawned.
When Gran’pa saw what was coming from the Green Jar he
came back and helped Gran’ma to her feet.
The Beautiful Girl turned and looked at them. “Who are you?”
she asked.
“Gran’ma and Gran’pa Huggins!” Gran’pa said.
“Did you open the Green Jar?” the Beautiful Girl asked.
“Gran’ma did,” Gran’pa answered, “but I advised her not to!”
“Well, seeing that she opened it anyway I shall forgive you,
Gran’pa!” the Beautiful Girl laughed.
“Shall we help you out?” Gran’ma asked, as she held out her
hands.
“Mercy, how sticky you are!” the Beautiful Girl cried. “We were
caught in a popcorn machine!” Gran’pa laughed.
When the Beautiful Girl had been helped from the Green Jar,
Gran’pa led the way to the door and up the stairs to the ground
above.
Gran’pa, Gran’ma and the Beautiful Girl came right out where
Janey and Johnny were hiding. The children flew to the old people
and threw their arms around their necks.
“Old Jingles sent the Wolf Pack after us,” Johnny said, “for we
saw him flying this way after you two had crawled into the cave!”
“Perhaps he will follow us into the cave!” said Gran’ma.
“I hope he sticks fast in the molasses candy if he does!” said
Gran’pa.
“Let us fill the opening here with stones!” Johnny suggested, “so
if he does follow you through the cave he will have to go all the way
back for his trouble!”
So they all carried sticks and stones and filled up the mouth of
the cave. When that was finished Janey asked where they had found
the Beautiful Girl.
“Let us travel from here as fast as we can!” said the Beautiful
Girl, “and I will tell you the story as we go along!”
As they hurried through the giant mushrooms and bushes the
Beautiful Girl told them the following strange story.
“I live in the City of Nite,” she began, “or at least I did live there
until I was shut up in the Green Jar. I was out walking one day near
the river, and as I stopped on the bank to gather some beautiful
flowers growing there I came upon a Queer Horse standing in the
water. At first I thought he could not be alive, for he stood so still
and he had no head; but as I stood gazing at him in wonderment he
switched his tail and knocked some flies from his back, and I heard
him say, ‘There now! I hope I switched all of you off!’
“‘Dear me!’ I cried out aloud. ‘A horse without a head talking!
Whoever heard of such a thing!’
“At this the Queer Horse came out of the water and sat down
upon the bank.
“‘I don’t see how you are able to travel about without a head!’ I
said.
“‘Well, it is a handicap,’ the Queer Horse answered, ‘but I have
grown used to it!’
“‘Where is your head?’” I asked him.
“‘I ate it off!’ he answered.
“‘Ate it off!’” I exclaimed in wonder.
“‘Yes!’ he replied. ‘You see, I was always a sort of pig when it
came to eating, and one day a Strange Man came up to me and hit
me with his cane and cried, “If you don’t quit your eating you’ll
burst! I believe if you were given all you could eat, you would eat
your head off!”’
“‘I should like to have a trial at it!’ I answered the man.
“‘Then,’ he said, ‘You shall have it!’ and he led me to a field
where hay and corn and oats grew thick! ‘Now,’ said the Strange
Man, ‘Eat!’
“‘So I ate and ate, until I really did eat my head off!’
“And,” continued the Beautiful Girl, “I felt so sorry for the Queer
Horse I went up and patted him where his head should have been,
and, lo! and behold, his head came into view!
“At this the Queer Horse was very happy, and told me he was
very grateful to me. ‘If I can ever be of assistance to you, I shall be
very glad!’ he said.
“And as we stood there talking the Strange Man came up to us
and said, ‘Why did you pat the Queer Horse where his head
wasn’t?’”
Gerstensorten aus. Stets ist es die kurze sechszeilige Gerste, das
Hauptgetreide der Pfahlbauern, welche wir neben dem Weizen
deutlich erkennbar auf den griechischen Münzen abgebildet finden.
Sie ist es, die wir auf den ältesten, nur auf einer Seite geprägten
Münzen aus dem 6. Jahrhundert v. Chr. (Münzen der griechischen
Stadt Metapontion am Meerbusen von Tarent in Unteritalien) in Form
einer prächtig ausgeführten, langen, begrannten Ähre als das
Symbol der pólis, des städtischen Gemeinwesens, abgebildet finden.
Ein Vierdrachmenstück einer andern griechischen Stadt, nämlich
Leontinon auf Sizilien, aus dem fünften vorchristlichen Jahrhundert
zeigt um einen Löwenkopf herum vier einzelne Körner derselben
Getreideart. Zwei Münzen aus Skotussa und Methydrion in
Thessalien geben Abbildungen eines einzelnen Ährchens des
grannenlosen Winterweizens wieder, während ein Obolos von
Orchomenos in Böotien ein einzelnes Weizenkorn derjenigen Abart
des gemeinen Weizens zeigt, welche gegenwärtig als englischer
Weizen bezeichnet und heute noch vorzugsweise in den
Mittelmeerländern angebaut wird.
Auf einer zweiten Münze von Metapontion aus späterer Zeit als
die erstgenannte, sitzt auf der dichtgedrängten kurzen Ähre der
sechszeiligen Gerste eine Wanderheuschrecke, auf der Rückseite
aber ist Apollon mit dem Lorbeerzweig, der die Gerstenfelder vor der
furchtbaren Heuschreckenplage bewahrende Gott, dargestellt. Auf
einer anderen Münze aus dieser unteritalischen Stadt ist neben der
Gerstenähre eine Zwergmaus auf einem Gerstenblatte dargestellt
und auf der Rückseite Ceres, die Beschützerin der Gerstenfelder vor
der Mäuseplage, in deren Haar die Ähren derselben Gerstenart
geflochten sind. „Selbst in diese kleinen Ähren, wie in die fast
ebenso kleinen auf campanischen Münzen — neben dem Pferdekopf
—“ sagt der verstorbene Züricher Botaniker Oswald Heer 1865, in
einer Arbeit über die Pflanzen der Pfahlbauten, „wußte der Künstler
den Charakter der heiligen (kurzen, sechszeiligen) Gerste zu legen,
während auf modernen Münzen, so denen der französischen
Republik von 1848, kein Mensch zu unterscheiden vermag, ob
Gerste, oder Weizen, oder Roggen dargestellt sein soll.“ Auf einer
andern Münze von Metapontion ist der Sperling, dieser stete
Begleiter des Getreides, auf einer weiteren die Getreidemücke neben
der Gerstenähre deutlich erkennbar abgebildet. Daraus können wir
schließen, daß das Getreide schon damals unter denselben tierischen
Feinden wie heute zu leiden hatte. Wenn nun auch aus den
metapontischen Münzen nicht zu entscheiden ist, welche Art von
Gerste gemeint sei, so zeigen uns diejenigen von Leontinon nach der
Gestalt der einzelnen Körner, daß wir es hier mit der kleinen, kurzen,
sechszeiligen Gerste zu tun haben, wie sie schon von den
neolithischen Pfahlbauern angebaut wurde, die also der Urtypus der
heiligen, auf den altgriechischen Silbermünzen dargestellten Gerste
ist.
Die Griechen der homerischen Zeit, zu Ende des vorletzten
Jahrtausends v. Chr., übten schon längst den Anbau dieser Gerste
neben demjenigen von Weizen aus. In der Ilias und Odyssee ist
neben dem Weizen (pyrós) vielfach von der Gerste (kri), bei den
späteren Griechen krithé genannt, die Rede, die fast stets den
schmückenden Beinamen „die weiße“ (leukón) trägt. So werden in
beiden Epen die Pferde mit Gerste und ólyra, das ist eine Art Spelt,
gefüttert. Dioskurides sagt uns nämlich in seiner Arzneimittellehre,
daß die ólyra zu derselben Pflanzenart wie der Spelt (zeiá) gehöre,
aber etwas weniger als dieser nähre. Auch aus ihm werde Brot
gebacken. Der eigentliche Spelt (zeiá) kommt nicht in der Ilias,
sondern nur in der jüngeren Odyssee vor. Als der Atride
Agamemnon, dem Sohn des Odysseus, Telemachos, bei seinem
Besuche in Mykene als übliches Gastgeschenk Pferde schenken
wollte, sagt dieser zu ihm: O Sohn des Atreus, willst du mir ein
Geschenk machen, so möge dies klein und wertvoll sein. Die Rosse,
die du mir schenken willst, möchte ich lieber nicht annehmen. Sie
bleiben besser bei dir, denn du herrschest über weite Gefilde, wo viel
Klee wächst und Weizen, Spelt (zeiá) und weiße Gerste; Ithaka
dagegen ist (weil gebirgig) nicht für Rosse passend, dagegen für
Ziegen.
In der Ilias wird „auf der Tenne die weiße Gerste leicht von den
Füßen der darüber getriebenen Ochsen ausgedroschen“, und im
ganzen griechischen Altertum galt die „weiße Gerste“ als besser als
die „rötliche Gerste“, wie schon Theophrast unterscheidet. Und der
griechische Arzt Dioskurides im 1. Jahrhundert n. Chr. sagt: „Die
Gerste ist am besten, wenn sie weiß und rein ist. Sie enthält zwar
weniger Nahrungsstoff als der Weizen, doch ernährt ein aus
gerösteter Gerste gekochter Trank (ptisánē, woraus bei den Römern
z. B. Plinius tisana, und daraus unsere Bezeichnung Tisane nicht nur
für eine Gerstenabkochung, sondern für jede durch Abkochen von
Arzneistoffen hergestellte Flüssigkeit wurde) doch stark, weil sich
beim Kochen viele Teile der Gerste ablösen. Man braucht übrigens
die Gerste (auch als Arznei) in verschiedenen Zubereitungen
innerlich und äußerlich.“
Im ganzen Altertum war vornehmlich g e r ö s t e t e G e r s t e ein
außerordentlich wichtiges und verbreitetes Nahrungsmittel; ja sie
dürfte überhaupt eine der frühesten, wenn nicht die früheste
Zubereitungsart des Getreides zur Nahrung des Menschen darstellen,
von der wir Kunde haben. So hat schon der vorhin genannte
Züricher Botaniker Oswald Heer zu Anfang der 1860er Jahre bei der
wissenschaftlichen Untersuchung der aus den schweizerischen
Pfahlbauten herrührenden Getreideüberreste festgestellt, daß in der
neolithischen und noch zur Metallzeit aus der Gerste keinerlei Brot
hergestellt wurde, sondern daß dieses so überaus häufig kultivierte
Getreide, das, wie gesagt, die wichtigste pflanzliche Nahrung jener
vorgeschichtlichen Mitteleuropäer bildete, stets nur geröstet
gegessen worden sein muß. Erst durch das Rösten wurden die
Grannen und Hülsen der Gerste so brüchig, daß sie leicht entfernt
werden konnten. Dies ließ sich auf keine andere Weise
bewerkstelligen. Das ist auch der Grund, weshalb die geröstete
Gerste noch im ganzen Altertum eine so überaus wichtige Rolle
spielte, und, als sie die Menschen nicht mehr aßen, sie dieselbe nach
altgeheiligter Sitte noch ihren Verstorbenen in die unterirdische
Behausung als Totenspeise mitgaben und den Göttern opferten.
Während also die Gerste von den Pfahlbauern stets geröstet
gegessen wurde, verfertigten sie aus den übrigen Getreidearten Brei
und flaches, nur 1,5–2,5 cm hohes, fladenartiges Brot, und zwar
außer Weizen- auch Hirsebrot, welch letzterem meist auch
zerquetschte Weizenkörner mit Leinsamen zur Erhöhung des
Wohlgeschmacks beigemischt wurden. Diese rundlichen Brotfladen
der Pfahlbauern, von denen sich mehrere Überreste bis auf unsere
Tage erhielten, sind auf der oberen Seite ganz unregelmäßig
runzelig, auf der unteren Seite dagegen, wo sie auf dem
heißgemachten Stein auflagen, glatt und hohl. Die sonst kaum zu
schälende Gerste aber wurde durch Rösten genießbar gemacht und
so gegessen; aus ihr verfertigte man keinerlei Brot, sonst hätte man
Überreste davon finden müssen. Auch die ältesten Ägypter aßen die
Gerste geröstet und gaben sie geröstet ihren Toten zu deren
Speisung im Geisterlande mit, wie uns zahlreiche Gräberfunde
kundtun. Auch bei den alten Juden spielte die geröstete Gerste, kali,
d. h. Geröstetes genannt, eine sehr wichtige Rolle neben dem aus
Weizen und Spelt gebackenen Brot, das auch bei ihnen gebräuchlich
war. Die uns allen von Jugend auf bekannte, idyllische Geschichte
der Moabiterin Ruth, die nach dem Tode ihres Mannes nach
Bethlehem (d. h. Brotstadt) kam und durch ihre Verheiratung mit
Boas die Stammutter des Davidschen Hauses wurde, spielt zur Zeit
„da die Gerstenernte anfing.“ Auch ihr wurde wie den anderen an
der Einheimsung der Ernte Beteiligten kali, also geröstete Gerste
verabreicht. Der junge David, der seines Vaters Herden weidete,
brachte seinen im Felde lagernden Brüdern Brot aus gerösteter
Gerste (kali), und auch dem vor Absalon fliehenden David, wird
außer Weizen, Gerste, Mehl, Saubohnen und Linsen, geröstete
Gerste (kali), gebracht, und auch von den Linsen wird ausdrücklich
gesagt, daß sie geröstet gewesen seien.
Auch bei den Griechen der homerischen Zeit spielte die geröstete
Gerste, von ihnen álphiton genannt, eine wichtige Rolle und wurde,
wie in der Odyssee geschildert wird, in ledernen Schläuchen (meist
aus Ziegenfell) statt des Brotes auf die Reise mitgenommen. Auch
Odysseus Sohn Telemachos befiehlt, als er seine weite Reise nach
Mykene antreten will, der Dienerin Eurykleia (der „weithin
Berühmten“) 20 Maß alphiton, d. h. von den Hüllen befreite und
grob gemahlene, geröstete Gerste in wohlgenähte Lederschläuche
zu tun, um sie zur Wegzehrung für sich und seine Begleiter
mitnehmen zu können. Stets wird in der Odyssee beim feierlichen
Opfer geröstete Gerste auf das zu schlachtende Rind oder sonstiges
Opfertier als Opfer an die Gottheit gestreut, und als die Gefährten
des Odysseus auf den Rat des Eurylochos frevelhafterweise einige
dem Sonnengotte gehörige Rinder schlachten und den Göttern als
Opfer darbringen wollten und es ihnen dazu an „weißer Gerste“
gebrach, so bestreuten sie dieselben wenigstens mit Eichenblättern.
Als Nestor einen Ochsen schlachten wollte, brachte Aretos in einem
Becken Weihwasser herbei und hielt in der anderen Hand ein
Körbchen mit gerösteter Gerste. Da nahte auch Thrasymedes mit
einer scharfen Axt in den Händen, um den Ochsen niederzuschlagen,
und so begann der alte Nestor die feierliche Handlung, indem er
seine Hände wusch und geröstete Gerste auf das Tier streute.
Noch in viel späterer Zeit bildete geröstete Gerste auch bei den
Griechen eine wichtige Nahrung des Menschen. So bestand noch in
der klassischen Zeit in Athen eine vom berühmten Gesetzgeber der
Athener, Solon (639–559 v. Chr.), einem der sieben Weisen,
erlassene Verordnung, wonach jede junge Frau bei ihrer
Verheiratung ein phrýgetron genanntes Gefäß zum Rösten der
Gerste in den jungen Hausstand mitzubringen hatte. Und als die
Griechen sich nach und nach von dieser altertümlichen Nahrung
emanzipierten, durfte geröstete Gerste wenigstens bei keinem Opfer
fehlen. In den Traditionen des uralten Kultes der Demeter (soviel als
Gē-mḗtēr, d. h. „Mutter Erde“ als Hervorbringerin der Brotfrucht) auf
Kreta wie in Eleusis bei Athen galt die Gerste als das „älteste Korn“
und „geröstete Gerste“ als die einst von den Ahnen gegessene
wichtigste Speise aus dem Pflanzenreiche als die unerläßliche
Grundlage im Opferritual. Dabei wurde die meist schwach geröstete
Gerste, zwischen den Mahlsteinen enthülst und grob zerkleinert, mit
Wasser angerührt und allein oder mit Zutat von Leinsamen oder
Olivenöl gegessen.
Noch der 79 n. Chr. beim Vesuvausbruch, der Pompeji und
Herculaneum verschüttete, als Befehlshaber der beim Kap Misenum,
bei der gleichnamigen Stadt stationierten Flotte umgekommene
ältere Plinius sagt in seiner Naturgeschichte: „Schrot (grobes Mehl)
von gerösteter Gerste (polenta) ziehen die Griechen dem aus
anderem Getreide hergestellten Schrote vor. Sie übergießen die
Gerste mit Wasser, trocknen sie eine Nacht hindurch, rösten sie am
folgenden Tage und schroten (frangere, d. h. brechen) sie auf der
Mühle. Manche rösten die Gerste stärker, besprengen sie dann
nochmals mit Wasser und trocknen sie wieder, bevor sie dieselbe auf
die Mühle bringen. Zu 20 Pfund Gerste werden 3 Pfund Leinsamen,
½ Pfund Koriander und ein acetabulum (ein kleines, auf dem
Ständer mit Essig und Öl stehendes Salzschälchen) voll Salz
genommen. Das alles wird geröstet und in der Mühle mit der Gerste
vermengt. — In Italien wird die Gerste nicht angefeuchtet, nur
geröstet und dann zu feinem Mehl (farina, im französischen farine
noch erhalten) gemahlen (molere); man gibt ihr dieselben Zusätze
und fügt noch Rispenhirse (milium) bei. Die Alten aßen Gerstenbrot;
jetzt dient es fast nur noch zu Viehfutter; dagegen wird eine
Gerstenabkochung (tisana) für stärkend und heilsam gehalten. Der
berühmte Arzt Hippokrates (460 v. Chr. auf der Insel Kos geboren,
bereiste Griechenland, Kleinasien, Skythien, starb 364 in Larissa in
Thessalien, führte die Geheimnisse der Ärzteschule der Asklepiaden
ins Leben ein, begründete die Lehre von den Krisen und die Diätetik)
hat dieser Gerstenabkochung ein eigenes Buch (Schriftrolle)
gewidmet.“

Wie bei den Griechen und Römern war ihrem ganzen Stamme,
den ältesten Indogermanen, die Gerste das „Korn“ schlechthin,
dessen einzelne Körner bei ihnen das kleinste Gewicht und
Längenmaß bildeten. Wäre der Weizen damals deren Hauptkornart
gewesen, so wäre das Weizenkorn und nicht das Gerstenkorn zu
einem solchen Zwecke herangezogen worden. Nur bei einem Zweige
derselben, bei den Römern, wurde die Gerste sehr frühzeitig aus
ihrer Rolle als Hauptnahrungsmittel durch den von ihnen far
genannten Spelt verdrängt, und so diente bei ihnen tatsächlich das
