Task A

What is gastronomy?
Gastronomy is a study of cultures foods which is served as an
appetizer or a delicate. It means the art or the science of good eating
like eating fine foods an example of gastronomy is when miniature
apple is made to taste like meat, cocktails in ice spheres. these are all
gastronomy things. Practical gastronomy is associated with the
practice and the study of the various foods and beverages, from
countries around the world. Theoretical gastronomy supports
practical gastronomy. It is related with a system and process
approach, focused on recipes, techniques and cookery books. Food
gastronomy relates to food and beverages. It also studies how
nutrition interfaces with the border culture. The application of
biological and chemical knowledge to cooking has become known as
molecular gastronomy yet gastronomy covers a much broader
ground. Critics say that you don’t have to study gastronomy to be
able to work in the food industry. Just simply enjoying food
appreciating cuisine and building up your skills can contribute in your
growth in the gastronomy spectrum.
Ethiopia
Cultures/religions and migration
Ethiopia is the only African country who have fought the European
countries i.e. Italy and still manage to beat them, making Ethiopia
the only country to resist colonization during the scramble of Africa.
Ethiopia has over 80 different ethnicities which includes Oromo and
Amhara being the 2 major ethnic groups in the country also including
Tigray, Somali and Hadiya. The different regions of Ethiopia and they
are Tigray, Afar, Oromo, Somali, Gambela, Benishangul-Gumuz and
Southern nation nationalities and peoples. Overall Ethiopia has 83
languages, Amharic being the most spoken language in the country.
In terms of religion orthodox Christianity (43.5%) and Islam (33.9%)
are the 2 most dominant religions in the country. Stats based on the
year 2007. The Ethiopian empire was established in the Ethiopian
highlands and due to migration there was the emergence of the
Afro-asiatic languages that exist today. These include Oromo, Tigray,
Amhara, Afar, Sidamo, Somalia, Agaw, Harar, Gurage and more.
The Amharic alphabet consists of 182 letters and this what the
Amharic alphabet looks like:
Traditional clothes
Normally clothes worn by females tend to be traditional, the dress is
normally well below the knee and its made by hand. It looks like this:
Food and drinks
Ethiopian cuisine/food is very different to many parts of Africa since
Ethiopian food revolves around the pancake looking Injera which
doesn’t have gluten and contains a lot of fibre, proteins and iron.
This is eaten with many vegetable stews, meat and other sauces by
ripping parts of the Injera and scoop up whatever is on the plate.
Berbere is a very popular spice used in Ethiopia and is used in many
sauces, meats and other vegetables stews. Also there are traditional
beverages as well this includes tej, Areke, Talla etc. they tend to
alcohol.
Here are the dishes which include the sauces and meats:
 This is called Ayibe and this is essentially cottage cheese.

 Kitfo- this is marinated raw meats and


it can be eaten Injera and false banana which is tough to bite
as it’s chewy and the kitfo contains a lot of butter and mixtures
of spices.
 Eukulal tibs- scrambled eggs alongside with peppers and
tomatoes normally eaten in breakfast.

 Dulet-This is like kitfo but this time it is a minced cow liver,


chilli and pan-fried tripe.

The ingredients for dulet is:


kidney ½ kg
liver ½ kg
tripe ½ kg
lamb red meat 1 kg
1 med onion
1 teasp mitmita (Ethiopian spice)
Green chili
Kibe(Ethiopian butter)
Salt
Method
First chop the liver, kidney, tripe and the lamb red meat very small to
make the dish. On a gentle heat add the liver, kidney, tripe and lamb
red meat to a dry pan and cook for around 5 mins. Then add the
onion, kibe and mitmita. Cook this for 5mins. Add fresh chilli cook for
2 more mins and then you are done.

Kita- flat bread that contains herbs.

Drinks
 Coffee(buna)- this is normally in served in small cups. In our
culture you have to have coffee 3 times.
 Tej-wine that fermented with yeasts and also consists of honey
 Areke- A strong grained alcoholic drink that is consumed in
small cups.
 Talla- Ethiopian sour beer which consists different grains such
as millet, barley and wheat.
How is Injera produced?
Injera consists of Teff, which is a gluten-free grain. It’s been
growing in Ethiopia for over 1000 years and it isn’t grown
elsewhere, hence why it’s exported to countries such as
Germany, Norway and Sweden. Teff has a lot of calcium and
you can use the grain to bake various kinds of gluten-free
bread.
1. Firstly, kneed flour and water and then activate the yeast
to make it fermented and let rise for 3 days.
2. Using a jug pour the mixture containing flour, water and
the activated yeast into the Ethiopian oven and make
sure it has a circular shape and close the lid for 30
seconds.
3. The end result is a pancake with many holes forming.
And this is what it looks like:

Science and technology


The Ethiopian science and technology information centre (STIC) was
founded in 2011 in Addis Ababa has the function to of providing
information to support scientific and technology (S&T) activity in the
country. STIC has published information on the financing of research
and development and on the nature and progress of innovative
projects and in 2014 was planning to introduce bibliometric
monitoring of publications in S&N. in centre has also provided ICT
facilities including a digital library, a patent information system an
automated a personnel management system and a S&T related
database.
GMF stands for Genetically modified food. GMF works by taking the
DNA of another organism that has planted into the initial food to
adjust its DNA. This helps food grow efficiently and effectively in a
hostile environment. In theory this should lead to more food being
made.
Technology: Sous-vide
This method is done by sealing the food in a bag, where cooking is
done at very accurate temperature in a water bath. Sous-vide use a
joule which is a WIFI-connected device which modify with a
smartphone.

Lifestyle changes, the media and individuals

Lifestyle changing
Back in the 60s the quality of life of people living in Britain had
increased. In those times plane to various parts of the world were
relatively cheaper compared to how it is today where flights are
generally more expensive resulted to more people having more
knowledge about a variety of cuisines across the world. As a result,
more the Chinese and Indian restaurants that we know of today
started to be set up across the entire UK. Marco White (A well-
known chef that is one presenters of MasterChef Australia) is
considered as the Godfather Chef as he altered the way people cook
food.

Organic food
in this day and age more and more people are starting to consume
organic food (food without little to zero preservatives and additives)
as people are starting to notice that it isn’t good for your health and
has chemicals that isn’t good for the body. Because of this
supermarket have been able to widen their food range as the
demand for organic food has risen so prices for organic food have
become cheaper.
Pescatarian
A pescatarian is someone who does not eat meat but eats fish. The
difference between a pescatarian and a vegetarian is that a
vegetarian does not eat or wear anything that is or was living such as
fish, meat or even eat dairy products. However, a pescatarian are
allowed to eat fish as they believe that it is because they are cold
blooded.
A semi-vegetarian
A semi-vegetarian also called a flexitarian is someone who eats a
vegetarian diet but sometimes eats meat, poultry or seafood.

Religion
Muslim cuisine
Muslim cuisine is having foods that are halal according to the Islam
law. An example of something that Muslim people are not allowed to
eat is pork which is considered as haram. When the eat meat it has
to be slaughtered in a certain way.
Fast-food and poor nutrition
Fast food joints such as McDonald’s, KFC and Burger king started to
gain popularity and more started to consume fast food restaurants in
the 1970s. This has resulted to more people buying take away food
such as Chinese and Indian take away food, and now has also led to
the emergence companies such as Uber eats, Deliveroo and other
food delivery companies. The benefits that consumers can reap is the
fact that fast food is cheap and convenient for people as many
people have a job are may be in a hurry to arrive on time hence why
it has become so popular. However, the issue with fast food is that
it’s processed food as contains a lot of fats and unhealthy chemicals
that isn’t good for the long run and could potentially lead to obesity,
which is why home cooked is safer to eat since people can control
how much sauce or how much of the ingredients the person can use.
Poor nutrition could mean eating food containing large amount of
calories. Especially when Children are inactive they tend to have bad
eating habits and eating unhealthy food such chocolate bars, sweets
etc. This is why children have lower vitamin and fibre intakes since
they eat less vegetable than adults.

Individuals
The Roux brothers are French chefs that settled in the UK since the
60s. They first opened a restaurant in England, London in which they
hold 3 Michelin stars over the last 25 years.
The media and Individuals
Gordon Ramsey is a British celebrity chef, restaurant and television
personality. He has 3 Michelin stars to his name since 2001 he has
been awarded 16 Michelin stars. Overall he’s currently has 31
restaurants today across the globe.
Gordon Ramsey has appeared and hosted hell kitchen, F word,
Kitchen Nightmares along with American versions MasterChef etc.

Geography and transportation


Billingsgate fish market is the largest fish market in the UK. Fish is
transported from all areas of the UK Including Lobsters from Canada
and from New Zealand.
Grimsby port
Grimsby is a notorious fish port and is recognised as a vital fish
market for not only the UK but in Europe. Its fish supplies come from
the seas across the Ireland and Norway but it can draw fish supplies
from local UK faros islands, Scotland’s and Ireland.

Roadkill cuisine
Roadkill cuisine is preparing and eating roadkill, animals get hit by
vehicles and found along roads.

Sustainability
In relation to food/catering techniques of sustainability farming is to
ensure the protection of plants and animals is maintained and no
wastage or damage occurs. This should give benefits such as decent
food and healthy products. this also means that you get fresh
products for example from plants and animals.

Sustainability food buying local


The food that you buy in your local store have been everywhere, up
and down the country just to get to your local store some supply.
The foods that you buy have been air-freighted for example your
fruits and vegetables it is a major contributor to the greenhouse gas
pollution from our food supply system. Now the countryside is more
divers mostly where it has been shaped by centuries of farming
traditions and so it also protects the landscape character.

Grow our own


It is much better for us to grow our own food because it is fresh but
the bad thing is that it is hard for people to grow their own food
because they might not know how to grow fruit and veg.
