1.1 Safety instructions


All service work on the instrument should only be carried out
by suitably qualified and authorized service personnel.
Always disconnect the instrument from the mains power
supply before making any adjustments.
High voltages are present inside the instrument. Take great
care when connecting the instrument to the mains power
supply to check operation, particularly when the instrument
has been partially disassembled.
All wiring and grounding to the instrument must conform to
local regulations. The power cable must be connected to a
mains power outlet with a protective earth contact.
To prevent operator injury or damage to the apparatus, verify
that the mains voltage is correct before connecting to the main
power.
Keep hair, clothing and personal effects clear of the
instrument during operation.
Always use the equipment for its intended purpose. Improper
use may impair safety features of the instrument
Perten Instruments cannot accept responsibility for any
accidents that may occur during apparatus repair or
adjustment. If in doubt, contact Perten Instruments.

1.2 Introduction
This service manual covers the Glutomatic 2200 (GM 2200)
instrument, manufactured by Perten Instruments AB.
For full details on the installation and operation of the
Glutomatic 2200, please refer to the Glutomatic System
Operation Manual supplied with the instrument.

1.2.1 Recommended tools


To service a Glutomatic 2200 instrument, you may require the
following tools. Tools listed without part numbers are generic
and are not supplied by Perten Instruments.

The front panel of the Glutomatic 2200 features five lights/buttons with the following functions

1 Disconnect the instrument from the mains power supply.


2 Remove the two screws securing the top cover on either
side of the instrument (a) and lift off the top cover.

3 Dislodge one of the side panels by lifting it upwards (b).
4 Disconnect the grounding cable from the side panel (c)
and remove the side panel from the instrument.

2.1 Introduction
To ensure accurate and repeatable test results from a
Glutomatic 2200, the instrument should regularly undergo a
normal service check.

To conduct a normal service check

1 Check the sieve–hook distance using the 0.7 mm gauge


(2.2.3, page 8). Adjust if necessary (2.2.4, page 9).
2 Check the spring tension using the 2 kg calibration
weight (2.3.1, page 11). Adjust if necessary (2.3.2,
page 11).
If the mix distance has been changed, the solenoid magnet
has been replaced or there are any operational concerns with
the Glutomatic 2200, a comprehensive service check should
be conducted. The following steps should be carried out in the
given order.

To conduct a comprehensive service check a

1 Disconnect the instrument from the mains power supply


and remove the instrument casing (1.2.4, page 4).
2 Using a flat-tip screwdriver, loosen the locking screw for
the adjustment knob (a) and turn the adjustment knob
clockwise (as viewed from the rear of the instrument) to b
increase the sieve–hook distance (b). Also see 2.2.4,
page 9.
3 Set the 4 mm mix distance (2.2.6, page 10).
4 Adjust the position of the white plastic stop (c) so that the
c
distance between the hook and the sieve is minimal.
5 Adjust the sieve–hook distance (2.2.4, page 9).
6 Adjust the spring tension (2.3.2, page 11).

2.2 Sieve and hook maintenance

2.2.1 Removing and refitting a hook and Plexiglas body


To clean, check, replace or adjust a hook or Plexiglas body,
they must first be removed from the instrument. This requires
tool 212202, the white plastic block that is used for both hook
removal and chamber assembly.

! Warning

Always disconnect the instrument from the mains power


supply before removing or adjusting a mixing hook or
Plexiglas body.

To remove a hook and Plexiglas body a

1 Fit the hook removal tool (212202) underneath the hook


and turn it clockwise (as seen from above) to loosen the
hook (a).
2 Unscrew and remove the hook by hand (b).

3 Turn the two thumbwheels anticlockwise (as seen from
above) to loosen the Plexiglas body (c).
4 Remove the Plexiglas body (d).

To refit a Plexiglas body and hook


c
1 Position the Plexiglas body, ensuring the lubrication hole
is facing forwards.
2 Turn the two thumbwheels clockwise until the Plexiglas
body is secured in place.
3 Screw the hook by hand onto the shaft. d

4 Tighten the hook using the hook removal tool (212202).

' Note

If the drive belt is loose, the belt may slip when attempting to
remove the left hook. See 2.4.1, page 13, for instructions on
adjusting the drive belt tension.

2.2.2 Checking for a bent mixing hook


Mixing hooks should be checked regularly to ensure they have
not been bent by excessive pressure.

To check a mixing hook is straight

1 Remove the hook (2.2.1, page 7).


2 Place the hook against a ruler or similar object to ensure
it is straight.
3 If the hook is bent, replace it with a new hook and check
the hook–sieve distance (2.2.3, below).

2.2.3 Checking the sieve–hook distance


The sieve–hook distance of the Glutomatic 2200 is factory set
to approximately 0.7 mm. A larger distance will increase wet
gluten results, leading to poor reproducibility. It may also
cause clogging of the sieves, causing the wash chamber to
flood.
To check and adjust the sieve–hook distance, a set of three
gauges of 0.6, 0.7 and 0.8 mm thicknesses is provided by
Perten Instruments (part number 211814).

To check the sieve–hook distance

1 Disconnect the instrument from the mains power supply


and remove the instrument casing (1.2.4, page 4).
2 Remove the mixing hook and Plexiglas body and refit the
mixing hook (2.2.1, page 7).
3 Remove the 88 μm sieve from the chromed, unmarked
sieve holder (part number 211022).
4 Place the 0.7 mm distance gauge into the sieve holder a
and position the sieve holder in the working position.
5 Orient the distance gauge and hook so they run from the
front to the back of the sieve holder, as shown (a).
6 Using your fingertips, move the sieve holder slightly while
keeping it in the working position (b). If the sieve–hook b
distance is correct, the gauge should just touch the
mixing hook.
7 Confirm that the sieve–hook distance is correct by
repeating steps 4–6 with the 0.6 and 0.8 mm distance
gauges. At step 6 these should be loose and tight,
respectively.

' Notes

After checking the sieve–hook distance on each side of the


instrument, swap the hooks and confirm that the distances
remain correct. If either side is too tight or too loose, try
another hook until they match. Swap the sieve holders and
check the distances remain correct. If either is too tight or too
loose, try another sieve holder until they match.
If a hook or a sieve holder is replaced, where possible the
replacement hook or sieve holder should be paired with the
existing hook or sieve holder to ensure the sieve–hook
distances closely match.

2.2.4 Adjusting the sieve–hook distance

To adjust the sieve–hook distance


a
1 Disconnect the instrument from the mains power supply
and remove the instrument casing (1.2.4, page 4).
2 Using a flat-tip screwdriver, loosen the locking screw for
the adjustment knob (a).
4 Turn the adjustment knob (b). To increase the sieve– b
hook distance, turn the adjustment knob clockwise (as
viewed from the rear of the instrument). To decrease the
sieve–hook distance, turn the adjustment knob
anticlockwise.
5 Check the sieve–hook distance (2.2.3, page 8).

6 When the adjustment is complete, tighten the locking
screw (c) and replace the instrument casing.

' Notes

One complete rotation of the adjustment knob changes the


sieve–hook distance by approximately 0.1 mm.
Always use the chromed, unmarked sieve holder (part number
211022) when adjusting the sieve–hook distance, and not the
sieve holder for wholemeal samples (part number 211032),
which is black chromate or chromed and marked with a ring.

2.2.5 Checking the mix distance


To check the mix distance, a 4 mm distance gauge (part
number 211022) is provided by Perten Instruments.

To check the mix distance

1 Ensure the instrument is disconnected from the mains


power supply.
2 Remove the mixing hook and Plexiglas body and refit the b
mixing hook (2.2.1, page 7).
3 Remove the 88 μm sieve from the chromed, unmarked
sieve holder (part number 211022).
4 Place the 4 mm distance gauge into the sieve holder (a).
5 Position the sieve holder in the working position (b). c

6 Check that the gauge fits tightly between the sieve holder
and the hook when the axle of the solenoid is pushed
fully back towards the rear of the instrument (c).

2.2.6 Adjusting the mix distance

To adjust the mix distance

1 Disconnect the instrument from the mains power supply


and remove the instrument casing (1.2.4, page 4).
2 Loosen the locking nut on the axle of the solenoid (a). a

3 Rotate the axle until the correct adjustment is achieved.


4 Tighten the locking nut.
5 Check the mix distance (2.2.5, above).

2.3 Fork arms


The instrument has two fork arms (part number 211315),
which protrude from the front of the casing and hold the
mixing chambers in position during a test. These fork arms are
precisely sprung to ensure consistent test results. The tension
in these fork arm springs should be periodically checked and
adjusted if necessary.
To check the fork arm spring tension, a 2 kg calibration weight
(part number 221520) is provided by Perten Instruments.

2.3.1 Checking the fork arm spring tension

To check the tension of the fork arm spring


a
1 Disconnect the instrument from the mains power supply
and remove the instrument casing (1.2.4, page 4).
2 Remove the mixing hook and Plexiglas body (2.2.1,
page 7).
3 Position the calibration weight at the end of the fork b
arm (a).
4 Pull the weight downwards and release. The fork arm
should come to rest with the white plastic stop 0.5–
1.0 mm from the end stop, as shown (b).

2.3.2 Adjusting the fork arm spring tension

To adjust the tension of the fork arm spring a


1 Using an open wrench (spanner), loosen the locking nut
on the end of the fork arm extension rod (a).
2 Turn the thumbwheel to adjust the spring tension (b). To
increase the tension, turn the thumbwheel clockwise
(when viewed from above). To decrease the tension, turn b
the thumbwheel anticlockwise.
3 Tighten the locking nut.
4 Check the spring tension (2.3.1, above).
5 Repeat steps 1–4 as required.

2.3.3 Replacing a fork arm


If a fork arm should become bent or damaged, it may need to
be replaced. Replacement fork arms can be ordered from
Perten Instruments (part number 211315).

To remove a fork arm a


1 Disconnect the instrument from the mains power supply
and remove the instrument casing (1.2.4, page 4).
2 Remove the mixing hook and Plexiglas body (2.2.1,
page 7).

3 Using a 1.5 mm Allen key, loosen the grub screws
securing the brass holding rings on each end of the
axle (a) and remove the holding rings.
4 Unhook the tension spring from between the solenoid
and the extension rod of the old fork arm.

5 Unscrew the fork arm extension rod (b).
6 Remove the adjustment arm (c).
7 Undo the screw inside the rear of the old fork arm (d).
8 Remove the axle from the fork arm and remove the old
d
fork arm.

' Note

To install a fork arm, reverse the above procedure. Ensure


each fork arm is centrally positioned and the holding rings are
installed with their tapered sides facing inwards.

2.3.4 Adjusting the fork arm position

To adjust the fork arm position

1 Disconnect the instrument from the mains power supply


and remove the instrument casing (1.2.4, page 4).
2 With the Plexiglas body, sieve holder and chamber in
position, align the bayonet part of the arm so that it sits
centrally on the sieve holder, as shown. That is, the
distances on each side between the sieve holder and the
fork arm should be even.
3 Tighten the screw at the inside rear of the fork arm.

2.4 Drive belt and cog wheels

2.4.1 Adjusting the drive belt tension

To adjust the drive belt tension

1 Disconnect the instrument from the mains power supply


and remove the instrument casing (1.2.4, page 4).
2 Loosen the four screws on the motor plate (a).
3 Pull the motor back until the drive belt is tight (b). b

4 Tighten the screws.

2.4.2 Replacing the drive belt


Should the drive belt break or become worn, a replacement
drive belt can be ordered from Perten Instruments (part
number 221414).

To replace the drive belt

1 Disconnect the instrument from the mains power supply a


and remove the instrument casing (1.2.4, page 4).
2 Using a 3 mm Allen key, loosen the screw securing one
of the cog wheels and remove the cog wheel from its
axle (a).
3 Remove the screw and spacer from one side of the top b
frame of the instrument, as shown (b), and slip the drive
belt through the resulting gap (c).
4 Repeat for the other side of the frame and remove the old
drive belt.
5 Position the new drive belt. c

6 Replace the screws and spacers in the frame.


7 Reposition the cog wheel.
8 Screw in the screw securing the cog wheel to the axle
until it touches the bottom of the slot and then reverse
one quarter turn. Make sure that the cog moves freely on
the axle.

' Note

The cog wheel is driven by the pin on the axle. This pin needs
to connect with the cog wheel screw to drive the cog wheel,
with the cog wheel still able to rotate freely on the axle.

2.5 Bearing housings


Replacement bearing housings can be ordered from Perten a
Instruments (part number 211120).

To remove a bearing housing

1 Disconnect the instrument from the mains power supply


and remove the instrument casing (1.2.4, page 4).

2 Disconnect the blue tubes from the pumps (a).
3 Remove the drive belt from the cog wheel.
4 Using a 5 mm Allen key, unscrew the motor chassis and
move it back to allow access to the screws that hold the
bearing housing in position. c

5 Remove the two screws at the rear the bearing


housing (b).
6 Carefully remove the bearing housing (c).

' Note

To replace the housing, reverse the above procedure. When


replacing the cog wheel, screw in the screw securing the cog
wheel to the axle until it touches the bottom of the slot and
then reverse one quarter turn. Make sure that the cog moves
freely on the axle.

2.6 The dispensing system

2.6.1 Filling the wash solution reservoir

To fill the wash solution reservoir

1 If required, unscrew the lid of the wash solution reservoir.


2 Fill the reservoir with a 2% (20 g/L) solution of sodium
chloride (NaCl).
3 If required, insert the blue silicone tubing from the back of
the Glutomatic through the hole in the reservoir lid and
connect the tubing to the submersible filter.
4 Place the filter in the wash solution reservoir and screw
on the lid.
5 Place the reservoir on the bench behind the Glutomatic.

' Note

A 2% saline solution is used for both dough-mixing and


washing.

2.6.2 Flushing the dispensing system


If the instrument is to be left idle for a significant period of
time, the dispensing system should be flushed with pure water
to avoid a buildup of salt crystals in the pumps and tubes.

To flush the dispensing system

1 Empty the wash solution reservoir and refill it with clean


water.
2 Fit a pair of empty wash chambers into the working
position on the front of the Glutomatic.
3 Place the two collecting cups underneath the wash
chambers.
4 Press the green START button to activate the test cycle.
5 After the wash cycle is complete, remove and empty the
collecting cups.

2.6.3 Wash pump tubing


The pump tubing carries the saline wash solution from the
wash reservoir to the dispensers, via the pumps. Prolonged
use may lead to splitting or other deterioration of the tubing,
which can lead to a leak of saline solution inside the
instrument. Other potential problems with the pump tubing
include crimping, causing a blockage, and a buildup of salt
crystals inside the tubing.
To avoid deterioration, the pump tubing should be
replaced annually.

To replace the pump tubing

1 Disconnect the instrument from the power supply and


remove the instrument casing (1.2.4, page 4).
2 Disconnect the tubing from the wash reservoir.
3 Move the black knob under the quick release tube holder
to the left. The left side of the holder will drop.
4 Remove the tubing and nozzle from the pump by
carefully pressing one finger towards the tube holder and
pulling the nozzle out.
5 Remove the tubing from the nozzle.
6 The tube should be 93 mm long. Push the new tubing
onto the nozzle until it reaches the collar of the nozzle.
The distance between the two collars of the nozzle is for
attachment to the pump.
7 Attach the tube assembly by pressing the nozzles into the
slots of the pump. No grease should be added.
8 Fit the tube holder.
9 Check the pump rate (2.6.4, page 17).

To remove a crimp from the pump tubing

1 If required, remove the pump tube using the above


instructions.
2 Remove the crimp by pressing the tube together, making
the tube uniform.
3 If required, replace the pump tube using the above
instructions.
4 Check the pump rate (2.6.4, page 17).

To remove salt crystals from inside the pump tubing

1 Flush the dispensing system with clean water (2.6.2,


page 15).
2 If salt crystals remain inside the tubing, remove the tubing
using the above instructions.
3 Wash out the tubing with clean water. If required,
squeeze the tubing to help dislodge the salt crystals.
4 Replace the tubing using the above instructions.
5 Check the pump rate (2.6.4, page 17).

2.6.4 Checking the pump rate


The pump rate should be checked periodically and after any
changes to the dispensing system.

To check the pump rate

1 Fit a pair of empty wash chambers into the working


position on the front of the Glutomatic.
2 Place the two collecting cups underneath the wash
chambers.
3 Press the green START button to activate the test cycle.
4 After the wash cycle is complete, remove the collecting
cups and carefully measure the volume or weight of the
wash solution.

' Notes

For a standard 5 minute wash cycle, the volume of solution


dispensed should be 250–280 mL. For non-standard wash
times, the correct volume of solution can be calculated by
multiplying the calibrated pump rate of 50–56 mL/minute by
the length of the wash cycle in minutes.
The density of 2% saline solution at 20°C is 1.01246 g/mL.
Hence the weight of 250–280 mL is 253.1–283.5 g.
While the volume of wash solution should be within the above
limits, this volume is not as critical for test accuracy as other

2.6.5 Adjusting the pump rate

To adjust the pump rate

1 Calculate the actual pump rate by dividing the volume of


wash solution collected using the above check procedure
by the length of the wash cycle in minutes.
2 Subtract the actual pump rate from the calibrated pump
rate of 53 mL/minute to calculate the difference.
3 Disconnect the instrument from the power supply and
remove the instrument casing (1.2.4, page 4).
4 Locate the potentiometer for adjusting the pump rate on a
the control board and turn it using a small screwdriver (a).
To increase the pump rate up, turn the potentiometer
clockwise. To decrease the pump rate, turn it
anticlockwise. A complete revolution of the potentiometer
will adjust the pump rate by approximately 10 mL/minute.
5 When you have finished, check the pump rate (2.6.4,
page 17). If required, repeat the above procedure.

2.7 Display lamps


To replace a display lamp, you will need a lamp removal tube
(part number 100214).

To replace a display lamp

1 Disconnect the instrument from the mains power supply. a


2 Carefully remove the lens using a flat screwdriver or
similar tool (a).
3 Press the lamp removal tube down over the old lamp.
4 Pull on the tube to remove the lamp (b).

5 Fit the new lamp. If the lamp is an LED type, note the
polarity and check that the lamp lights up. If it does not,
switch the polarity.
6 Replace the lens.

' Notes

When removing the lens, it may separate into two parts.


Simply snap the two parts together before replacing.
There are two types of display lamp. Older instruments are
fitted with incandescent lamps, while instruments
manufactured since 2010 are fitted with LED lamps.
The older style incandescent lamps (part number 122209) are
now obsolete, while the newer LED lamps are incompatible
with the old lamp holders and lenses. If replacing an older
style lamp and no spare is available, use an LED lamp and
replace the lens and switch or lamp holder. The relevant part
numbers are given below.

2.8 Cleaning

2.8.1 Cleaning the instrument


Clean the instrument regularly using a soft cloth moistened
with water and a mild household detergent. Do not use other
cleaning liquids. If you spill water over the instrument,
disconnect from the power supply and allow to dry for
24 hours.

2.8.2 Cleaning the sieves


The interchangeable plastic sieves should be cleaned after
every test by rinsing them under running water without
dismantling the sieve. Occasionally, it may be necessary to
dismantle the test chambers and remove the sieves before
cleaning them.

2.8.3 Cleaning the mixing hooks and Plexiglas bodies


The mixing hooks and Plexiglas bodies should be wiped clean
between each test. The Plexiglas bodies should also be
removed and thoroughly cleaned daily.

To clean the mixing hooks and Plexiglas bodies

1 Disconnect the instrument from the mains power supply.

2 Wipe the mixing hooks and Plexiglas bodies clean with a
damp cloth (a).
3 Fit the hook removal tool underneath one of the hooks (b)
and turn it clockwise (as seen from above). Remove the
hook.

4 Turn the two thumbwheels anticlockwise (as seen from
above) to lower and remove the Plexiglas body.
5 Repeat steps 3–4 for the other hook and Plexiglas body.
6 Thoroughly clean each Plexiglas body (c).

7 Replace each Plexiglas body with the lubrication hole
facing forwards and turn the thumbwheels clockwise to
secure it in place.
8 Replace each hook and tighten using the hook removal
tool.

3.2 Check procedure


The following check procedure may assist in trying to identify problems with a Glutomatic 2200
instrument.

1. Sample weight Check that the balance used for weighing the sample is given accurate
and repeatable results by comparing with known standard weights.

2. Dispenser Check the accuracy of the mix solution dispenser by weighing a solution
sample. The weight of 4.8 mL of a 2% saline solution at 20–24°C is 4.84–
4.92 g.

3. Time settings Check that the mixing time is set to 20 seconds and the wash time is set
to 5 minutes (4.2, page 26).

4. Pump rate Check that the volume of wash solution dispensed by the instrument
during the 5 minute wash cycle is 250–280 mL (2.6.4, page 17).
Check that wash solution starts dripping into the chamber immediately
after the 20 second mix cycle.

5. Mixing hook Check that the mixing hooks are not bent (2.2.2, page 8).

6. Hook–sieve Check the sieve–hook distance (2.2.3, page 8) and adjust if required
distance (2.2.4, page 9).

7. Plastic chamber Check that the mixing chamber (part number 211021) is not assembled
with too much force, which may cause it to deform. The mixing chamber
should slide easily over the Plexiglas body.

8. Sieve holders Check that the correct sieve holders are being used. The sieve holder to
be used with the fine sieve (part number 211022) is chromed and
unmarked. The sieve holder to be used with the coarse sieve for the
wholemeal method (part number 211032) is either black chromate or
chromed and marked with a grove or ring. The marked sieve holder is
made for the coarse and thicker sieve and cannot be used with the fine
sieve because the hook–sieve distance will be different.

4.1 Time adjustments


The time settings of the Glutomatic 2200 include the:
• dough-mixing time (default 20 seconds)
• washing time (default 5 minutes), and
• wholemeal procedure stop time (default 2 minutes).
These time settings can be changed using the dip switches on
the control PC board, located on the rear panel of the
instrument. The time settings should in most cases be left
unaltered. The factory settings corresponds to test standards
ICC 155, ICC 158 and AACC 38-12 (which corresponds to
ICC 137/1).

To change the time settings

1 Switch off the instrument.


2 Rotate the small access panel at the rear of the
instrument, as shown.
3 Use a small flat-tip screwdriver to adjust the dip switch
positions (see Table 1 below).
4 Switch on the instrument to activate the new time
settings.

' Notes

The upper switch (switch 1) is used to set the wholemeal


procedure stop time (positions 1–3) and the beep signal
(position 4). Positions 5–8 are not used. See Table 1 below.
If position 4 on the upper switch is set to ON (default), the
instrument will emit a beep signal 15 seconds before the final
washing ends and another beep signal 25–30 seconds after
the washing ends. These signals are to alert the operator that
the test will soon end and that the centrifuge should be started
30 seconds after the wash has ended.
The lower switch (switch 2) is used to set the dough mixing
time (positions 1–4) and the wash time (positions 5–8). See
Table 1 below.
The wash 1 time must be longer than the wholemeal
procedure stop time. If it is not, the instrument will emit short
beeps and not function.
