Last minute change requests can have varying reasons. If the original requirements as written do not actually meet minimum user needs, or an emergency fix is needed, then the schedule needs to give way to delivering something that actually meets minimum viable product. If there's a contractual obligation, changing the scope of work usually allows renegotiation of the deadlines and compensation. If the change request is a nice-to-have that would impact current release date, affirm the importance of the new feature and you'd love to put that into the scope of work/requirements for the next release. If the customer pushes back, make sure they understand it could shift the release date.
