Sugar-free Simplicious Christmas: Clean bee's knees cocktail
MAKES 8
1 cup just-boiled water
3 tablespoons rice malt syrup
12 sprigs thyme plus extra to serve
360ml vodka or gin
120ml lemon juice
120ml apple cider vinegar
■ Combine the water, rice malt syrup and thyme in a jug and allow to brew for 20 minutes. Strain and cool.
■ Make two cocktails at a time by shaking one-quarter of the thyme liquid with one-quarter of each of the remaining ingredients. Strain into two chilled cocktail glasses and garnish with a sprig of thyme.
NOTE I called on my mates the Trolley’d boys – two Australians who serve cocktails from an old airline trolley at events – to fine-tune this boozy treat, a refreshing aperitif with gut-boosting properties. You may want to add more syrup if you like.
